One of my favorite, EASY, weekday lunch is mix and match Poke Bowl! These bowls are packed full of colorful veggies, as well as healthy proteins and fats. Meals will never get boring because you can change it up every time! Another great thing for me, is that I like to track my macros to monitor my caloric intake. When I’m wanting some extra fat, I can add in some extra avocado, or if I don’t want as many carbs, I can swap cauliflower rice for regular…so versatile, right?! Ingredients that are my favorite go-to’s for a winning Poke Bowl are:
Rice (Brown, White, or Cauliflower)
Cucumber
Mango
Fresh JalapeƱo
Avocado
Pickled Ginger
Green Onion
Carrot
Purple Cabbage
Smoked Salmon (In particular, I love the Trader Joe’s Everything Bagel Smoked Salmon!)
Spicy Mayo (which is an easy combo of regular or light mayo, mixed with lime juice and sriracha. If you like
it more spicy, add less mayo. Less spicy…more mayo!)
Another little kick I like to add, is to marinate the salmon for 10-15 minutes in a simple marinade! I mix together:
1 Tablespoon Soy Sauce, or Coconut Aminos
1 Teaspoon Rice Vinegar
1 Teaspoon Sesame Oil
1 Teaspoon Sriracha
1 Teaspoon Honey
I stir these ingredients together, add the salmon and let it sit while I prepare the bowl. When I’m finished, I add the salmon and the marinade. Then I top the whole things with a drizzle of spicy mayo!
